Frequently asked question:  Why aren't your exotic products made with 100% of the exotic meat?  Answer: We want all of the meat we use and the production processes used to produce the products to be fully inspected by the USDA (and in turn for all of our products to proudly carry a "USDA inspected" stamp).  USDA inspection provides an important assurance to our partner retailers and end customers.  In order to get mandatory inspection by the USDA a product is required to contain at least 3% of an "amenable" specie (ie. beef, pork or chicken).  Therefore, we add a bit of extremely lean beef or pork to our exotic products.  Hope that explains why we do what we do.  Don't worry, as the nutrition panels on our products and reviews customers leave on the products attest, doing this doesn't affect the flavor or quality of products.
